Ruby Tuesday, located at 2102 Emrick Boulevard in Bethlehem Township, permanently shut its doors on the morning of Thursday, January 9, 2025. A notice posted on the entrance expressed gratitude to "valued Ruby Tuesday guests" for their years of support. According to various reports, the restaurant chain sought bankruptcy protection during the COVID-19 pandemic in 2020 and managed to emerge from it a year later.

The Lehigh Valley has closed its only Ruby Tuesday restaurant, marking the end of operations roughly four years after three other locations suddenly closed their doors.

Ruby Tuesday, 2102 Emrick Boulevard in Bethlehem Township, was closed for good Thursday morning. A sign on the front door thanked guests for their years of patronage.

"We value your previous support and sincerely apologize for any trouble this may create," reads the sign. It directs visitors to the nearest alternative location in Wyomissing, Berks County.

The reason for the restaurant's closure remains uncertain. A representative from the chain did not respond promptly to a request for additional details on Thursday morning.

Similar signs in June 2020 said Ruby Tuesday restaurants had closed on Tilghman Street in South Whitehall Township; inside the Lehigh Valley Mall on MacArthur Road in Whitehall Township; and along Route 22 in Pohatcong Township.

Ruby Tuesday is famous for its selection of burgers, seafood, sandwiches, and its Garden Bar, featuring over 50 different ingredients.

Published reports say the pandemic hastened Ruby Tuesday’s decline after it was shrinking for years.

The chain in late 2020 reportedly filed for Chapter 11 bankruptcy due to the “unprecedented impact” of the COVID-19 pandemic. The chain closed 185 restaurants.

The chain in winter 2021 emerged from the bankruptcy filing with roughly 200 restaurants, according to multiple published reports, including one in Nation’s Restaurant News.
